Tuna Melt Pizza Baguettes

These pizza baguettes are great on their own or serve with chips for a bigger meal. For a veggie or cheaper alternative, follow the recipe but leave out the tuna. You could also make these with any other toppings you prefer.

  • 2 Part Baked Baguettes
  • 1 Green Pepper (diced)
  • 2 Tomatoes (diced)
  • 160g of Tinned Sweetcorn
  • Tin of 160g Tuna (drained)
  • 125g Cheddar (grated)
  • 4 Tablespoons of Tomato Puree

1.  Preheat the oven to 190°C/170°C (fan oven)/gas mark 5.
2.  Halve the baguettes and place on a baking tray. Bake for roughly 8 minutes.
3.  During this time mix 75g of the cheese, green peppers, tomatoes, sweetcorn and tuna together in a bowl.
4.  Now spread each of the baguette pieces with 1 tablespoon of tomato puree. Then top with the tuna mixture and sprinkle with the left over grated cheese.
5.  Bake in the oven for 12 - 15 minutes until golden and the cheese has melted.

Tomato Puree - 35p Tesco
