Creamy Mushroom Linguine

Easy to make Creamy Mushroom Linguine, very tasty and filling too!

Serves:  4

300g Linguine
350g Mushrooms (sliced)
1 Small Onion (diced)
2 Cloves of Garlic (crushed or finely chopped)
150ml of Double Cream
2 Vegetable Stock Cubes
1 Tablespoon of Butter or Margarine
Sprinkle of Black Pepper

1. Boil the linguine in slightly, salted boiling water.
2. Whilst the linguine is cooking, fry the onion and garlic for 2- 3 minutes in the butter. Then add the mushrooms and fry for a further 5 minutes.
3. Pour in the cream, stir and bring to the boil. Reduce the heat, add the stock cubes and a sprinkle of black pepper. Give it a good stir to dissolve the stock cubes. Simmer for 5 minutes.
4. Drain the linguine then add to the sauce. Stirring thoroughly to combine the linguine with the sauce. Serve!
