Easy Coconut Chicken Curry

Save money buying takeaways with this tasty Coconut Chicken Curry recipe, made using coconut milk. It is really simple to make and filling too. Delicious served on a bed of long grain rice (value option only 40p Asda/45p Tesco).

  • 600g Chicken Breast (diced)
  • 1 Medium Onion (diced)
  • 5 Cloves of Garlic (finely chopped or crushed)
  • 1 Large Potato
  • 1 Tin of Coconut Milk
  • 2 Tablespoons of Curry Powder
  • 2 Tablespoons of Butter
  • 1 Tablespoon Vegetable Oil

1.  On a low heat melt your butter or ghee, then add the curry powder and blend together well.
2.  Add the coconut milk to the curry mixture, stir well and simmer on a low heat.
3.  Next in a separate, large frying pan, fry the onion and garlic on a medium heat until onions have softened.
4.  Add the chicken to the onions and garlic. Once the chicken has cooked slightly, add the diced potato and pour in the curry mixture from the other pan.
5.  Mix everything together well and bring to boil on a high heat, then cover and simmer on a low-medium heat for 30 minutes. Serve with rice when ready.

Vegetable Oil - 80p Tesco

I used medium strength curry powder but Tesco also have mild or hot alternatives, depending how spicy you like your curry.
