Simple Potato and Leek Soup

This lovely creamy soup is so simple to make, packed full of flavour and suitable for Vegetarians too. Delicious served with crusty bread.

Serves:  4

  • 1 Tablespoon of Vegetable Oil
  • 1 Onion (diced)
  • 225g Potatoes (diced)
  • 2 Medium Leeks (finely sliced)
  • 2 Pints of Boiling Water
  • 4 Vegetable Stock Cubes
  • 150ml Double Cream
  • Sprinkle of Salt and Black Pepper

1.  In a large pan heat the vegetable oil on a medium heat and fry the onion for 2-3 minutes until softened.
2.  Add the leeks and potatoes and fry for a further 5 minutes, stirring occasionally.
3.  Next mix the vegetable stock cubes with the boiled water in a jug, then pour into the pan with the vegetables. Season with salt and pepper, mix well and bring to the boil. Once boiling, reduce the heat to low and cover with a lid. Simmer for approximately 20 minutes until vegetables are soft.
4.  Pour in the double cream, give it a good stir and simmer for further 5 minutes. Leave chunky or blend if you prefer. Then serve.
