Mushroom & Tomato Penne Pasta

This pasta dish is really cheap to make, suitable for vegetarians and very tasty. Lovely on its own or topped with a sprinkle of cheese and served with garlic bread.

  • 1 Onion (diced)
  • 2 Cloves of Garlic (finely chopped or crushed)
  • 300g of Penne Pasta
  • 1 Tin Chopped Tomatoes (400g)
  • 250g Mushrooms (sliced)
  • 1 Tablespoon of Vegetable Oil
  • 1 Tablespoon of Mixed Herbs
  • 1 Vegetable Stock Cube
  • 200ml Water (boiled)

1.  Add the penne pasta to a pan of slightly salted, boiling water.
2.  In another pan heat the tablespoon of vegetable oil on a medium and lightly fry the garlic and onion for 3 minutes or until the onion starts to soften.
3.  Next add the mushrooms to the onions and garlic, fry for a further 3 minutes stirring occasionally.
4.  Mix the vegetable stock cube with 200ml of boiled water, add to the pan with the tinned tomatoes and the mixed herbs. Stir well and simmer for 10-15 minutes uncovered on a medium heat, again stirring occasionally.
5.  Remove the sauce from the heat and drain the pasta. Add the drained pasta to your sauce and mix thoroughly, then serve.
