Easy Citrus Muffins

Really easy to make citrus muffins. This recipe makes 12 so there will be plenty to go around.

  • 245g of Self Raising Flour
  • 3 Teaspoons Caster Sugar (for topping)
  • 3 Tablepoons of Mixed Citrus Peel
  • 105g of Caster Sugar
  • 160ml Milk
  • 80ml Vegetable Oil
  • 1/2 Tablespoon of Lemon Extract
  • 1 Egg

1.  Preheat the oven to 200C°/180C° (fan oven)/gas mark 6 and line a cupcake tray with paper cupcake cases.
2.  In a small bowl mix 3 teaspoons of caster sugar and 1 tablespoon of the mixed peel and set to one side to use later for the topping.
3.  In another bowl beat the milk, egg and oil together, then sieve in the flour, add the sugar, 2 tablespoons of the mixed peel and 1 tablespoon of lemon extract. Mix together well.
4.  Divide the mixture evenly in the cupcake cases and sprinkle the sugar/mixed peel over the top of each one.
5.  Bake in the oven for 15 to 18 minutes or until golden brown. Allow to cool for 5 minutes, then serve warm or let them cool completely and eat cold if you prefer.
